Let Them Eat Dirt
This is an article we found interesting.
Its author, Jeff D. Leach is a science and archaeology writer and founder of the Human Food Project and it appeared in the New York Times Opinion Pages.
Mr. Leach posits that even with over 7,000 farmers’ markets in the country, there is still an important ingredient we’re all missing: dirt (we prefer ‘soil’, but be that as it may.) Maybe not dirt per se, but the microscopic, beneficial bacterium found in dirt. He contends, we think correctly, that with all the ‘triple-washed’ greens, wet wipes and hand sanitizers, our collective immune systems are becoming seriously compromised.
Perhaps he thinks we’re all too clean.
Mr. Leach writes:
Increasing evidence suggests that the alarming rise in allergic and autoimmune disorders during the past few decades is at least partly attributable to our lack of exposure to microorganisms that once covered our food and us.
Sounds about right, doesn’t it?
Joel Salatin told us once that all the microorganisms, all the living participants in soil, are there for a good reason; to keep our immune systems functioning properly.
And we think he’s right.
Think of all the allergic disorders folks are combating nowadays. Could it be with all the attention to ‘clean’, that we’re missing vital, helpful organisms found in dirt?
